Add the potatoes, mix well, and cook for about 2 minutes stirring continuously. Now add the eggs and cook for about 3 to 4 minutes.

Add the water; bring it to the boil; lower the heat and let it simmer for about 20 minutes, stirring every 5 to 7 minutes.

PRAWN AND PEPPER CURRY

Serves 4.

Preparation and cooking time: 25 mins.

Prawns are rare in Indian homes, but prawn curries do taste good, and are always worth a try. For this recipe you need a deep frying pan or wok.

340g (12oz) green peppers

60ml (2fl oz) cooking oil

2 medium size onions, finely chopped

2 ripe tomatoes cut into small pieces

1 tsp salt

½ tsp turmeric powder

½ tsp chilli powder

½ tsp garam masala

340g (12oz) peeled prawns

Method

Chop the peppers lengthways into pieces about 2.5cm (1 inch) long and 1cm (½ inch) wide.
